Try These Homemade Quick Yummy Lassi Recipes

Lassi is a traditional summer drink from the state of Punjab. This popular, creamy, sweetened yogurt drink is a gem among Punjabi food recipes. It is a common sight in the North especially in Punjab, Rajasthan, UP and Delhi to find street vendors selling frothy lassi in matka (clay pots). There are three versions of lassi – salted, sweet and masala. Sweet lassi is slightly heavy due to the use of rich milk and sugar. The key to good lassi is to use thick homemade yogurt (curd) that is absolutely chilled and hand blended with a wooden churner. The yogurt should be fresh and sweet in flavor. Lassi makes for a filling breakfast and you are good to go for the day. So try these recipes at home.

1.Strawberry Yoghurt Lassi

Ingredients Serves: 2

Method

  • Finely chop 3 of the strawberries and set aside. Place the remaining strawberries and sugar in a blender and whiz on high speed for 30 seconds. Pour in the milk and yoghurt and whiz on high speed for 1 minute.
  • Place ice cubes in serving glasses and pour in the lassi. Top with the reserved strawberry pieces and serve.

2.Mango Lassi

Ingredients

  • 2 ripe mangoes (1 pound each)
  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 2 cups small ice cubes

Method

  • Peel mangoes, and remove pits; coarsely chop flesh.
  • Puree mangoes and yogurt in a blender until smooth.
  • Add lime juice and honey; pulse to combine.
  • Add ice; blend until incorporated. Serve immediately.

3.Mint Lassi

Ingredients

    • 2 cup Yogurt
    • 1/4 cup Mint leaves
    • 1/4 tsp Black salt
    • 1/2 tsp Salt
    • 1 tsp Ginger juice
    • 1/2 cup ice cubes
    • Few mint leaves for garnishing

    Method

    • Blend mint leaves with two tablespoons of yogurt to make a paste.
    • Add yogurt, ginger juice, salt, black salt, and one cup of water. Blend just enough to make the drink smooth.
    • Pour it over ice cubes and garnish with roasted cumin seed powder and mint leave.

    4.Chocolate Lassi

    Ingredients

      • 1/2 cup buttermilk
      • 3-4 tsp sugar
      • 4-5 ice cubes

      Method

      • Add all ingredients in a grinder and grind it.

      • Grind till fluffy.

      • Now spread chocolate syrup in a serving glass.

      5. Rose Flavour Lassi

      Ingredients

        • 2 cup curd
        • 1 cup buttermilk
        • 4-5 tsp sugar
        • 2 tsp rose syrup
        • 1 drop rose essence
        • 7-8 ice cubes
        • 2-3 mint leaves

        Method

        • Add curd,buttermilk,sugar,ice cubes in a blender,blend it.

        • Now add rose syrup and rose essence and now blend till fluffy.

        • Pour in serving glasses spread rose syrup.

        6.Kesar Dryfruits Lassi

        Ingredients

          • 300 ml fresh curd
          • 5 ice cubes
          • 5 tablespoons powdered sugar
          • 1 big pinch of saffron (soaked in 1 tablespoon milk)
          • 1 tablespoon chopped cashews

          7.Kesar badam Lassi

          Ingredients

          • 2 cup Curd
          • 5-6 tsp Sugar powder
          • 8-10 Almonds chopped
          • 8-10 Kesar strings
          • 1/2 cup Crushed ice

          Method

          • Grind almonds, cardamom, kesar, milk powder sugar in a grinder.
          • Blend curd. Add kesar almonds powder. Add crushed ice. Again blend all.
          • Garnish chopped almonds & kesar strings. Enjoy chilled kesar badam Lassi.

          7.Mixed Fruit Lassi

          Ingredients

          • Yoghurt/curd – 2 cups (chilled)
          • Milk – 1/2 cup
          • Apple – 1 small (chopped into medium pieces)
          • Banana – 1 large (peeled and chopped into pieces)
          • Pear – 1 (chopped into medium pieces)
          • Cardamom powder – 1/4 teaspoon
          • Sugar – 2 tablespoons or as per your taste

          Method

          • Grind all the chopped fruits, sugar and milk to make a smooth paste.
          • Then add yoghurt and cardamom powder. Blend till smooth.
          • Pour the mix fruit lassi in serving glass and serve chilled.

          TIPS

          You can add grapes, mango, musk melon, watermelon or any seasonal fruits of your choice.

          You can also add honey instead of sugar.

          Do not use citrus fruits as they do not go well with curd.

          Freeze or refrigerate the fruits before blending. It gives a creamy texture to the lassi.
